He explains that foods high in sugar (sugar, fruits, breads, pasta, and others) cause a sugar spike in the blood, which triggers an insulin spike in the blood. Insulin rise drives sugar levels down rapidly causing hypoglycemia (low blood sugar) with its symptoms of hunger, weakness, mood swings, and irritability. These symptoms create a craving for foods that quickly raise blood sugar levels, which trigger the next sugar-insulin roller coaster. Prof. Ali also discusses links between these triggers and adrenaline and other neurotransmitter shifts. Gut fermentation caused by sugar abuse and untreated food and mold allergy intensify sugar craving.
